I added my stepfather's last name to my birth last name when I was younger. Now that I am an adult can I just drop my stepfather's name and only use my birth last name?

If you simply began to add the name informally when you were young, of course you can stop using it now. If there is any problem when renewing various accounts or whatnot, just have your birth certificate ready to show your name.
If you legally changed your name when you were younger through a legal name-change process, you can also change your name back now, though to make it official you will have to do the name-change process again. We have a busy name-change department that can provide you forms and assistance:
